Honey-Glazed Arctic Char Taco

with corn and parsley salsa.

Ingredients

For the taco

  • 8 oz arctic char
  • 2 tbsp honey
  • 3 tbsp oil
  • salt (to taste)
  • 4 small soft tortillas

Corn and parsley salsa

  • 1 cup cooked corn
  • ⅔ cup parsley
  • ⅓ cup cilantro
  • ½ piece mild chili
  • ½ white onion
  • 1 lime
  • 3 tbsp Oil
  • salt (to taste)

Instructions for the honey-glazed arctic char taco

  1. Preheat a grill pan.
  2. Cut arctic char into 4 pieces.
  3. Mix honey and oil in a bowl.
  4. Coat the fish with the honey-oil mixture and season with salt.
  5. Fry fish on each side for 2 minutes.
  6. Heat the tortillas on a hot dry frying pan for 10 seconds on each side.
  7. To serve, place fish on tortillas and top with salsa.

Instructions for the salsa

  1. In a bowl, mix chopped cilantro and parsley with corn.
  2. Add diced onion and chili.
  3. Add juice from the lime and oil. Season with salt to taste.
